Cranberry Crunch Salad

This salad is exciting and different from the normal, boring salad. It’s perfect as the main meal or as a side dish, and it also adds a special dish to a get-together.

Ingredients:

Salad:

1/2 head of lettuce, preferably romaine

1/2 cup dried cranberries

1/4 cup chopped walnuts

1/4 cup crumbled gorgonzola cheese

2 hard-boiled eggs, sliced

Italian dressing:

1/8 cup virgin olive oil

1/8 cup red wine vinegar

1/8 tsp. black pepper

1/4 tsp. dried basil

1/4 tsp. dried oregano

How to Cook:

Chop the lettuce into small pieces. Add the cranberries, walnuts and cheese, and toss the ingredients together. Place the sliced eggs on top. To make the dressing, blend all the dressing ingredients in a blender or by hand, and drizzle the mixture over the salad.
